Salmon with Brown Sugar and Mustard Glaze

Instructions

  1. Brine the fish in a 9% salt solution (1T salt in 1C water) for 10 minutes to reduce albumin exudation. Rinse off the brining solution and pat the fish dry.
  2. Melt the brown sugar, honey and butter, remove from heat, then whisk in the mustard, soy sauce, olive oil and ginger.
  3. Brush the flesh side of the salmon with the glaze, then broil flesh-side up until done.
  4. Plate and serve.
