Salmon with Brown Sugar and Mustard Glaze

Ingredients
- 4 ea salmon fillets
- 3 T light brown sugar
- 1 T honey
- 2 T butter
- 1/4 C Dijon mustard
- 2 T soy sauce
- 2 T olive oil
- 1 T ginger, finely ground
Options
- substitute maple brown sugar for brown sugar
- add chipotle pepper
Instructions
- Brine the fish in a 9% salt solution (1T salt in 1C water) for 10 minutes to reduce albumin exudation. Rinse off the brining solution and pat the fish dry.
- Melt the brown sugar, honey and butter, remove from heat, then whisk in the mustard, soy sauce, olive oil and ginger.
- Brush the flesh side of the salmon with the glaze, then broil flesh-side up until done.
- Plate and serve.
